In 1398, the Central Asian conqueror Timur swept through Samarkand and northern India. Following this geopolitical transformation, hundreds of master cooks, woodcarvers, weavers, and stone calligraphers migrated to Kashmir. The culinary artisans synthesized Persian, Central Asian, and indigenous Kashmiri Kashmiri spices, giving birth to what we cherish today as the **Wazwan**.
### The Art of the Hereditary Waza
The word *Wazwan* derives from *Waza* (cook) and *Wan* (shop). Cooking a royal Wazwan is a grueling test of endurance and knife craft passed strictly through hereditary familial lineages. Meat is never ground in mechanical mincers; it is rhythmically hand-pounded for hours on smooth river stone plinths using carved walnut wood mallets until it reaches a silky, emulsified paste.
### The Traami Tradition & Dining Etiquette
1. **The Tash-t-Naari:** Before the meal commences, an attendant carries an ornate engraved copper ewer and basin (Tash-t-Naari) around the room so guests can wash their hands with warm water.
2. **The Traami:** A large engraved copper platter is placed in front of every four guests. Sitting on embroidered floor carpets (Qaleen), the four companions share the platter, symbolizing equality, camaraderie, and community brotherhood.
3. **The Base:** The Traami arrives crowned with fragrant steamed basmati rice, bordered by quartered roasted chicken (Kabargah), seekh kebabs, and Methi Maaz.
